60g Parmesan, grated, plus extra to garnish

6 Free-range eggs, lightly beaten

125ml-Smoked trout

125ml Fresh cream or milk

30ml Soft butter

10ml Fresh dill, chopped

Salt and freshly ground black pepper, to taste



1. Preheat the oven to 160°C.

2. Grease 6 ramekins with a little butter and dust with Parmesan.

3. Mix the Parmesan, eggs, trout, cream, butter, dill and seasoning.

4. Pour into the ramekins and bake until the edges are set, about 15 - 20 minutes.

5. Serve immediately.
