50ml Light or golden rum (leave this out for a 'virgin' version)
1 Fresh lime
25ml Simple syrup
Top up with Appletiser
Garnish with large mint leaves



In a tall glass, combine the chopped lime, simple syrup and mint leaves.
Gently mash with a pestle or the back of a wooden spoon and then add the crushed ice and the rum.
Top up with Appletiser, stir and add the mint.
